What is the best coffee for Turks? The main criteria and signs of quality grains

To the intricacies of the selection of quality coffee and its cooking In the classic way in Turku, lovers of coffee drinks are treated with particular scrupulousness.

Coffee brewed in a cezve helps to reveal the exquisite aroma of beans and enjoy their unique taste, but in order to get it right choose natural coffee beans and not to buy a fake, the gourmet will have to familiarize himself with the selection criteria and the best varieties.

Turkish coffee selection criteria

Variety

The main selection criterion on which the taste of the prepared drink depends. Popular types of raw materials from which Turkish coffee is brewed are:

  • Arabica - is considered an elite variety, has many shades of taste and aroma, contains a small amount of caffeine. To prepare a fragrant drink in Turkish, it is better to choose Arabica. This variety has a rich smell and taste, slight sourness and a pleasant aftertaste;
  • robusta - the variety is characterized by a rough taste, high caffeine content and low cost due to lower cultivation costs. Espresso lovers should give preference to Robusta - such a drink will turn out to be strong, with bitterness and creamy foam.
Important! If desired, Robusta grains can be mixed with Arabica in any proportions, obtaining a unique drink with interesting taste and aroma properties.

Growing region

It is determined which taste of the invigorating drink is better, and the area in which the raw material was grown. To date, the largest supplier of grains is Brazil., where Arabica coffee is obtained with a rich chocolate and nutty aroma. Brazilian has a slight bitterness and a smooth, velvety texture, for which it is especially appreciated by gourmets.

In addition to Brazil, there are also coffee plantations in:

  • Ethiopia - with a sour aftertaste and a delicate aroma of wild berries;
  • Indonesia - grains with a sweet nutty flavor, a pronounced aroma with citrus notes;
  • Cuba - with a slight acidity, a pleasant sweetish aftertaste and bright flavors;
  • Honduras – strong coffee with bitterness, mild floral taste and delicate sourness;
  • India - in the taste of the prepared drink you can catch chocolate notes;
  • Colombia - beans with a mild balanced taste and fruity fragrance;
  • Kenya - grains are slightly sour and have a pleasant currant flavor.

Grinding degree

Prepare a delicious drink Turkish without proper grinding of grains will not work. The grinding of coffee beans can be:

  • rude - large particles with a diameter of up to 1 mm, well revealing their taste and aromatic properties during brewing;
  • average - a common grind, most often used for preparing in a coffee machine or brewing it in a cup;
  • thin – particle size up to 0.3 mm, which complicates the filtration process;
  • super thin - used to make real Turkish coffee. Fraction size is only 0.1 mm;
  • powdery - the consistency resembles flour, making the drink thicker.
Attention! To prepare in Turku, you need coffee of fine and powdery grinding, which will allow you to get a fragrant and rich drink in 5-7 minutes.

Roasting

The degree of heat treatment also affects the taste. Allocate total five types of roast:

  • English - minimal processing, in which the grains languish for only a few minutes;
  • american – light roasting with the preservation of the herbal aroma of coffee beans;
  • urban - the average degree of roasting, giving the grains a pronounced aftertaste;
  • viennese - prolonged heat treatment, during which the beans acquire a black tint and a bitter aftertaste;
  • Spanish - the maximum degree of roasting, giving the grains a rich burnt taste.

When buying coffee, you should study the inscriptions on the packaging indicating the degree of roasting of the beans.

For this many manufacturers use a scale of 1 to 5. The lowest number indicates a light degree, and the number 5 indicates a deep roast.

Signs of quality grains

To purchase high quality coffee beans, first of all, you need to pay attention to their appearance. The beans should be whole, approximately the same in size and shape, exude a pleasant aroma.. If there is an unpleasant rancid smell, you should not buy grains.

It is impossible to determine the quality of coffee beans in opaque packaging, therefore experts recommend buying coffee in specialized stores, where the buyer will have the opportunity to view the beans and ask to grind them.

By the way! Having made a choice in favor of grains in the package, you need to ensure that it is hermetically sealed and not damaged.

Features from different countries

An important role in the choice of coffee for the Turks is played not by the brand and not by the country where the product was packaged, but region where coffee trees grew.

The choice of grains will depend on the individual preferences of the consumer.:

  • if you want to get a strong drink with bitterness, you should choose coffee from Honduras or Indonesia;
  • for a charge of vivacity for the whole day, Brazilian is perfect, characterized by richness and strength;
  • delicate taste with fruity notes will give coffee beans from Kenya or Ethiopia.

Which is better to choose?

Manufacturers offer 3 types:

  1. In beans - the traditional form, the most convenient for storage. Cereal can be stored for a long time without fear that it will lose its smell or taste. In addition, a drink made from freshly ground coffee beans is much tastier than vacuum-packed ground coffee.
  2. Powder - ground coffee beans cooking in turkish, coffee maker or coffee machine. From the point of view of storage possibilities, ground grain loses to grain, as it loses its aromatic qualities faster, absorbing foreign odors.
  3. Capsular – the product is ground coffee packed in a disposable vacuum capsule. Each capsule contains a portion of an aromatic drink of a certain type and degree of roast, however, this option is intended for preparation in a capsule coffee machine.
Note! Coffee in capsules can also be brewed with the help of Turks. To do this, you just need to open the capsule and pour its contents into a cezve, and then prepare the drink in the usual way.

Olga:

For me, the most important thing in coffee is the strength. I like to drink a rich drink without sugar and spices, I don’t add milk or cream either. I often order Lavazza and grind the beans in an electric coffee grinder, after which I cook in a Turk on gas. So coffee turns out to be very pleasant in taste, there is no acid or strong bitterness, but chocolate aroma with a fruity-floral tint is well felt.

Boris:

I consider freshly ground coffee to be the most delicious, so I always buy La genovese in medium roast beans. It has a rich taste, complemented by a sweet fruity bouquet with aromas of spices and nuts. To achieve a caramel flavor, before cooking, pour sugar into the Turk and warm the mixture a little, and then pour in the water. The coffee turns out great.

Svetlana:

I drank ordinary instant coffee for many years, but when I tried a drink brewed in a Turk, I decided that now I will also prepare it this way. I bought Jardin - a good ground coffee at an affordable price, but, as for me, not strong enough and the chocolate taste declared by the manufacturer is not felt. Next time I will try to buy in grains, maybe I will like this option more.

    I really love Kenyan coffee, its taste and aroma are just amazing. Coffee is always without characteristic bitterness, such as Indonesian, and if you add cloves or cinnamon to such coffee, then for winter days it’s just a divine drink. Even in Turkish coffee, I like to add a little black allspice.

    Were in Lviv on an excursion. This is where the real cult of coffee is! There are so many different types offered in coffee shops that your eyes run wide! And next to it is a shop where coffee beans are sold by weight. Species 100, no less. You can order and you immediately get it swept away.

    We chose Arabica and chocolate. Now at home we enjoy this unearthly taste. If you are in Lviv, be sure to buy coffee beans. You won't find this anywhere else.
